First, you make this simple cake mix cookie recipe below. Then you bake as directed, and as soon as they come out of the oven you just place an Andes Mint on top and let it sit for a few minutes. Then you smear them around.

Mint Truffle Cookies
1 chocolate cake mix
1/2 cup shortening
2 eggs
24 Andes Mints (or one for each cookie)
Mix first three ingredients together and roll into 1" balls. Bake at 375 for 8-10 minutes. As soon as they come out of the oven, place a mint on top of each cookie. Let sit for a few minutes, then smear around.
